With just weeks until the much-anticipated opening of Chippendale’s new seafood paradise, Longshore, located at The Old Clare Hotel, La Collection thought the timing was perfect to take a look at what the celebrated duo behind the restaurant – Jarrod Walsh and Dorothy Lee – have planned.

The Old Clare Hotel, Chippendale in Sydney has appointed La Collection as its local representative, marking the first move into the Australian domestic scene for Lea Seguier and Craig Farrell’s brand. La Collection will oversee sales and trade marketing for The Old Clare Hotel in Australia and New Zealand, from its Sydney and Melbourne bases.

The Old Clare Hotel in Sydney has opened its newly renovated wing of guest rooms, ushering in a refreshed direction and even more variety for guests. The light-filled north wing of the hotel, previously home to Silvereye restaurant, has been transformed into seven Art Deco rooms, welcoming a third variety to the hotel’s existing industrial and contemporary rooms.

Australia has been pinpointed as a location of desired growth for the Design Hotels collection of independent properties. The Berlin-based company has 328 unique member hotels in 235 destinations across 59 countries, but its tally down under currently sits at just three – The Old Clare Hotel in Sydney, Adelphi Hotel in Melborne and Ovolo Nishi in Canberra.

From Tuesday 30 October, the Eastern Mediterranean flavours of the Inner West will make their way to Chippendale, as Barzaari is set to take over the former Kensington Street Social space within The Old Clare Hotel.
