Singapore Tourism Board has teamed up with renowned Sydney-based chef Nelly Robinson to bring an epic dining experience to NEL Restaurant, showcasing a reimagined take on Singapore’s eclectic and innovative culinary scene. On Tuesday this week, LATTE was among a handful of media invited to be the very first to experience ‘A Taste of Singapore’ this week.
Launched on Wednesday 29 March and running until 27 May, A Taste of Singapore is an 11-course degustation experience which will offer Aussie diners the chance to reignite their passion for the Lion City. Distinctive flavours, cooking techniques and iconic dishes for which Singapore is well-known served with a twist, provided by Chef Nelly’s creative approach to tastes and story-telling.
Known for its incredible multi-cultural offering which spans Chinese, Malay, Indian and Peranakan influences, Singapore’s dining scene is steeped in a rich heritage. It also continues to grow and evolve, driven by the passion of home-grown chefs and tastemakers. It has long been a favourite destination for Chef Nelly, who finds the variety of local flavours and dynamism of the Singapore food scene a constant source of inspiration.

A Taste of Singapore is the culmination of Chef Nelly’s trips to Singapore, which sees him apply his distinctive culinary flair to some of Singapore’s most iconic and well-loved dishes, including chilli crab and Hainanese chicken rice.
Singapore’s foodie fans will be thrilled to see familiar names on the menu like otak, satay and laksa, while others will remain a joyous mystery, to be deciphered only upon the first spoonful, like Cereal Fish and Gardens by the Bay.Robinson, Owner and chef patron of NEL Restaurant, said, “Singapore is one of my favourite culinary cities in the world. The diverse range of flavours and cooking styles that have been passionately honed by local chefs over many decades is what keeps me going back for inspiration time and time again. This bespoke menu is my homage to that and I hope it will give Aussie diners a tantalising taste of what they could experience on their next trip to Singapore.”
Stephanie Yong, Area Director Oceania at Singapore Tourism Board said, “Singapore is well-known for our innovative and adventurous approach to food, so partnering with Chef Nelly, who has a similar culinary philosophy, was a natural fit. Aussies can expect to be taken on an adventurous and unexpected food journey that reimagines the vibrant and diverse flavours of our City in Nature.”

As a special treat, guests who make bookings for the first week of the limited-time menu will also have the opportunity to experience the Garden City Sling, a cocktail prepared by visiting mixologists from Singapore bar Hopscotch, also known for its distinctive twists on familiar Singapore tastes.
We won’t spoil it for you, so LATTE has two words to sum up this divine degustation experience – utterly delicious. The 11 courses are a journey around Singapore’s diverse culinary cultures, leaving diners pining for their next trip to the Lion City.
