The Sundays’ Catseye Pool Club offers first look at menu

Diners at Hamilton Island’s newest boutique hotel are in for a treat

Catseye Pool Club, a central feature of soon-to-launch The Sundays boutique hotel on Hamilton Island, has offered a first look at what lies in store for diners when the venue opens on 24 April 2025.

Curated by renowned chefs Josh and Julie Niland, the new dining venue has been designed to embody the laid-back, sun-drenched atmosphere of island life, serving up a blend of relaxation, exceptional food and breathtaking views.

Nestled beside the picturesque Catseye Bay, the Catseye Pool Club offers diners the chance to enjoy long meals by the water, where they can savour Australian ingredients at their best. The menu, based on the philosophy of shared dining, is designed to bring people together, encouraging guests to linger over dishes that capture the essence of a relaxed island holiday.

As Josh Niland explains: “Whilst ‘family style’ or ‘share style’ dining is very much a way restaurants have operated for many years, the Catseye Pool Club approaches its menu with each item very much designed to be enjoyed as a whole table, with all the trimmings coming with each dish.”

As a nod to the oceanfront location, Niland’s renowned whole fish cookery will take centre stage, though the menu will not be exclusively seafood. “The menu will evoke the abundance of ingredients enjoyed in a summer lunch or dinner with family and friends,” he said.

In addition to lunch and dinner, Catseye Pool Club will offer an exclusive breakfast experience for hotel guests, featuring dishes like the ‘CPC’ Spanner Crab Royale and Coconut & Verjuice Honey Bircher. “The menu is still undergoing final deliberation,” Niland said. “but guests can expect beautiful fresh pastries made by the team.”Beyond the culinary offerings, the Catseye Pool Club reflects the ethos of The Sundays hotel as a sanctuary for relaxation and connection. “It’s about creating an atmosphere where everyone can detach, unplug, and simply enjoy being together,” Niland said. Guests can also enjoy cocktails made with Queensland ingredients, curated by expert Bar Director Sam Cocks, while basking in the natural beauty of Hamilton Island.
